Fall Feels with Winter Weather

After a very long and stressful Fall semester, I am finally home for the Holidays! I love this time of year for many reasons. . . 1) I get to enjoy all of my favorite hobbies without the lingering thought of "wow, I should probably start doing work for x" 2) I get to sleep in, and by that I mean I get to enjoy the best sleep without the added stress of worrying about what school work I'll have to get done the next day and 3) I get to be around the wonderful company of friends and family all day errrryday ! It's one thing to be at school and having to call friends and family to talk, but there is something so wonderful about being in their company that makes me appreciate how lucky I am to have such caring individuals in my life, especially around the holidays <3
I have been feeling sick once again so working out isn't really an option for me, but hopefully some healthy and nutritious food will do the trick and get me back to my normal self! The other morning I enjoyed a big bowl of stove top oats, with a wonderful twist!
Stovetop "Apple Pie Oats"
Ingredients include: coconut mik, unsweetened vanilla almond milk, old fashioned Quaker oats, organic maple syrup, cinnamon, nutmeg, vanilla extract, and diced apples.

There is no real measurements for each ingredient, I kind of taught myself how to make stovetop oats, and it is SUPER simple! Just add the two milks in a pot over medium heat, then a cup or two of oats -- make sure the liquid covers the oats this is the only very important step! Let this bubble and reduce to low heat. Next I'll add in the cinnamon, maple syrup, nutmeg, vanilla extract and let it thicken even more! Once the oats look thicker (you want them hot and thick, but definitely not dry) I added the diced apples and some extra maple syrup ! Topped this bowl off with crushed mixed nuts and craisins . . . NOM NOM . . . a healthy & happy start to these cold winter mornings :)
