Quinoa & Arugula Salad

This is the perfect salad to keep on hand in the fridge! It usually doesn't last me more than three days but can certainly be a versatile part of any meal.
​
Ingredients:
1 box of organic arugula
2 Tbsp. of sundried tomatoes in oil
1/2 cup of almonds, toasted
1/3 cup red onions, sliced
1 cup of cooked quinoa (2 cups water & 1 cup dry quinoa)
1/2 cucumber, sliced
Homemade Lemon Honey Dressing:
In a mason jar combine . . .
1 scoop of minced garlic
Fill jar will ACV to cover the garlic (let sit for 5-10 minutes) to "pickle"
After, add 2-3 Tbsp EVOO, salt, and pepper
Add 2 Tbsp. Honey & MIX IT ALL UP!

Top the salad ingredients off in one large mixing bowl with this dressing and some oil from the sundried tomatoes!

Baked Salmon and Simple Arugula Salad
​
A simple dish filled with fresh flavors and all the heart
healthy fats you could imagine! A mix of monounsaturated fats from
the avocado sauce and polyunsaturated Omega-3 Fatty Acids from
the salmon.

Ingredients:
Extra Virgin Olive Oil
Juice of 1 lemon, & slices for topping
Cracked Pepper
Sea Salt
​
Place salmon on aluminum foil, on a pan, and drizzle generously
with olive oil and squeeze 1/2 -1 lemon on top. Add cracked pepper
& sea salt then top with lemon slices. Bake at 375 * F for 15 min.

Simple Salad:
2 handfuls arugula
Mozzarella balls
Cherry Tomatoes, sliced
Chosen food Lemon & Garlic Dressing

Black Bean Sweet Potato Burgers
​
My life was easily changed when Rachael Devaux, RD shared this recipe on her Instagram during fourth of July weekend. This simple yet innovative dish is the PERFECT addition to any outdoor BBQ in the summer. Paired with a side of fresh fruit and corn, this meal will give you so many additional nutrients and leave you feeling super satisfied.

Ingredients:
1 large sweet potato, cut into circles
1 Avocado
1 Roma Tomato
Mixed Greens
Ketchup / Sriracha

Black Bean Burgers:
1 15 oz. can of black beans
1 tsp cumin
1 tsp paprika
1 tsp chili powder
1 egg
2-3 T Almond Flour or 1/2 cup Rolled Oats
Sea Salt & Pepper

Put sweet potato circles on an aluminum foil pan and drizzle with olive oil or use avocado oil spray. Top with some black pepper. Broil on high for about 10 minutes. Until slightly burnt on top! Keep an eye out.
​
Mash the black beans to keep some whole beans. Add the egg and remaining ingredients. Form into patties and put on a plate to be stored in the freezer for about 20 minutes. Take out of the freezer. Heat a pan on medium heat and spray with cooking oil of choice. Place one side of the pattie on the pan to cook. Flip until cooked to your liking!
