Paleo Blueberry Bread & Muffins 

The perfect pick-me-up treat during the day or at night! Honestly, it can even function as an awesome breakfast with almond butter and Siggi's blueberry flavored yogurt. On my instagram feed I am always stressing the amazing benefits of blueberry especially in terms of blood sugar control and cognitive function.

Dry Ingredients: 

1 1/3 cups fine blanched almond flour

1/3 cup coconut flour

1 tsp baking soda 

1/4 tsp salt

Wet Ingredients:

3 large eggs

1/4 cup pure maple syrup 

1/3 cup fresh squeezed lemon juice

Zest of 1 large lemon

3/4 cup fresh blueberries (or raspberries)

Set oven to 350 * F 

1. Combine all dry ingredients in one bowl.Wisk together evenly. 

2. Combine all wet ingredients in another bowl.Wisk together! 

3. Gradually add the dry ingredients into the wet ingredients combining slowly. 

4. Place the batter in 12 muffins tins or a 8x4 inch loaf pan (greased lightly). 

5. Place in oven and bake for 40-50 minutes until golden brown. 

Serve with powdered sugar on top, coconut milk glaze, or homemade blueberry compote.
