I am always on the search for quick meals that are both nourishing and delicious. Next time you want to step outside the box I highly suggest Zoes Kitchen which has a new take on "healthy fast-food." I haven't been making meals at my apartment much this week, but no problemo . . . I figure it's just because this week is an adjustment back to school ! Never the less, I was able to make my Friday lunch choice a nourishing one when my best friend suggested this new "fast-food" place down the road. Zoes Kitchen is filled with fresh ingredients and gives a whole new life to healthy fast-food, and also Mediterranean cooking. I really wish I could call this Rachel's Kitchen because it's everything I love and more.

I was completely in awe by all the delicious choices, but in the end I decided to go with a fresh and satisfying salad called "Live Med Salad". This salad was packed with so many yummy flavors and important nutrients -- spinach for a powerful source of iron and calcium, zucchini ribbons for a great source of fiber, tomatoes, farro for a complex carbohydrate option, and plenty of plant oils for flavor and unsaturated fats. I also ordered some roasted red pepper hummus which came with pita bread . . . My friends and I didn't finish it all so I packed it away in a to-go container to bring back to our apartment. And that's the best part about Zoe's Kitchen, you get very reasonable portions for the minimal price you pay.

So next time you want a healthy, yet satisfying option for lunch I suggest Zoe Kitchen ! You'll be amazed by just how fresh the ingredients presented to you really are !
