Paleo Apple Cinnamon Walnut Bread

To all my brunch, cinnamon, nut, and bread LOVERS here is the latest recipe I found on Pinterest (duh) for the BEST paleo bread in this universe ! Okay . . . maybe not universe, but the best bread I have baked in my nineteen years of existence !

My inspiration for finding this amazing recipe was the Bob's Red Mill Coconut Flour I bought last week when I went to Wegmans. I also bought a large container of raw unsalted walnuts, because I figured those were something to have on hand ! AND then came my boredom last night when I realized it was only 9 pm, I had not had dessert yet, and I was off from work the next day.
Paleo Apple Cinnamon Walnut Bread :
1/2 cup Bob's Red Mill Coconut Flour
1 T Ground Cinnamon
1 cup unsweetened applesauce
1/2 tsp baking soda
1/4 cup 100% pure organic maple syrup
1/4 cup nut butter ( I used Don't Go Nuts Roasted Soy Butter ) or coconut oil
vanilla extract
4 organic cage-free eggs
1/2 cup walnuts (1/4 for the batter & the other 1/2 for topping )
Cinnamon Bun Protein Frosting :
1/2 packet of Quest Nutritional Protein Powder (Vanilla Milkshake flavor)
1/2 cup unsweetend almond milk
1 tsp Ground Cinnamon
Directions:
1. Preheat oven to 350 and lightly grease a small loaf pan or baking dish.
2. In a large bowl combine all dry ingredients listed above.
3. In a smaller sized bowl lightly wisk the eggs, vanilla extract, & maple syrup together. Next, add in the melted nut butter of choice and unsweetened apple sauce. Mix until combined.
4. Incorporate wet ingredients into the dry ingredients until evenly combined and the batter starts to form. ** NOTE: It will seem like you have too much liquid in the batter, but trust me it's necessary due to the coconut flours dry & gritty-ish texture **
5. Pour batter into your lightly greased baking dish and cook for approximately 40 minutes or until knife comes out clean.
6. Let the bread cool completely (or over night and place in fridge) . . . Make the cinnamon bun protein frosting in the AM and drizzle on top of eat piece or the entire loaf then top with all the crushed walnuts your heart desires !! :)
This is a cross between cinnamon buns for breakfast and apple pie for dessert . . . SO pretty much heaven !
