Thai inspired "Salmon Super Salad"

It's really surprising to me how much I've learned about essential Thai ingredients just from going out to eat and reading the descriptions on the menu ! For dinner tomorrow night I already cooked my delicious Farm Raised Atlantic Salmon I picked up from Wegmans & have started concocting an awesome Thai inspired Super Salad with plenty of fiber, omega-3's, antioxidants, etc. This salad isn't SUPER for nothing, and it's obviously no surprise that it contains kale as the base for it's deliciousness !
From what I have gathered from many restaurants is that the main components of a "thai dish" contain either some for of seafood (yummy my favorite), starch (noodles or rice) , peanut oil, spicy sauce of some kind (usually sweet red chili sauce or curry paste), citrus fruit of some kind , and so many other ingredients . My motto is always: simple, healthy, & delicious ! I may have cut down on many of the ingredients a traditional thai dish contains, BUT don't worry I'm still keeping it fresh and delicious at the same time, so check it out below !

Ingredients:
1 1/2 cups organic kale
1 handful of dried cranberries
1 handful of raw unsalted Cashews
1/4 cup diced or shredded carrots
1/4 cup cucumbers
1 T Lemon Juice
1 T Trader Joe's Sesame Ginger Dressing
1 piece of cooked Farm-Raised Atlantic Salmon **
Directions for cooking Salmon:
** this just depends on how much salmon you can eat in one sitting, but I always precook mine to save time in the next few days **
1. Preheat oven to 400 * F -- Good, you're almost there !
2. "Marinate" aka: just mix around in a bowl for a hot sec -- Extra Virgin olive oil, pepper, garlic, sprinkle of salt, parsley flakes, dried basil leaves -- any seasonings you like !
4. Place marinated salmon on an aluminum foil lined baking sheet THEN evenly spread about 1 T of Trader Joe's Sesame Ginger Dressing on top & some lemon juice !
5. Cook for approximately 12 minutes at 400 *F ( Test doneness by taking out of the oven after 12 minutes and testing with a fork to see if "flaky" not RAW on the inside )
ENJOY !
