Vegan Energy Bites

For the times when a nice piece of chocolate is all you want for a snack !

My Recipe for Vegan Dark Chocolate Chunk Energy Bites:

Ingredients:

5-6 Pited Dates

2 T Don't Go Nuts roasted cinnamon sugar soy butter (any nut butter will do)

Splash of Vanilla Extract

1 tsp Ground Cinnamon

1/2 cup Quick 1-min oats

1/2 cup unsweetened coconut shreds

1/4 cup large Dark Chocolate Chunks ( I buy the Trader Joe's brand 1 lb Dark Chocolate bar and mash it up myself)

First things first . . . soak your dates in a small bowl of hot water for about 5 min ! Remove the pits if they aren't already removed !

In a food processor combine: soaked dates, vanilla extract, cinnamon, oats, & coconut shreds !

** These ingredients can obviously be messed with and I highly suggest you try and create a recipe that you like **

If the energy balls do not seem to be sticking together well either 1. Soak 1-2 more dates and add to the food processor OR 2. Splash in some unsweetened almond milk

Last, add chocolate chunks and any other ingredient (sliced almonds) with a spoon and then form into 1/2 inch balls by rolling in the palm of your hand ! (This can be messy lol)

Keep refrigerated for as long as you desire . . . It won't be that long because you'll finish these REAL QUICK ;)
