Dark Chocolate Zucchini Protein Brownie Bites

I always find myself creating recipes with dark chocolate . . .
Ingredients:
2 large organic cage free brown eggs
1/2 cup creamy PB or any other nut butter ( Crazy Richard's PB has just ONE ingredient and that's peanuts )
1 1/2 tsp pure vanilla extract
1 tsp ground cinnamon
1/2 cup of natural unsweetened apple sauce
3/4 cup 100% pure organic maple syrup
1 packet of chocolate flavored vega one plant based protein powder
1/3 cup unsweetened cocoa powder
2 T Whole Wheat Flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 1/2 cup shredded zucchini
Delicious Additions:
Raw unsalted nuts, dark chocolate chunks, unsweetened coconut flakes . . .
Directions: preheat oven to 350 *F
1. In a medium sized bowl whisk together eggs, creamy PB, vanilla extract, cinnamon, unsweetened natural apple sauce, and maple syrup.
2. In the same bowl, measure 1/3 cup unsweetened cocoa powder, 1 packet of vega one chocolate flavored protein, baking soda, baking powder, whole wheat flour, & salt.
3. Blend ingredients gently by folding with a mixing spoon until incorporated fully.
4. Progressively add the shredded zucchini to make sure the batter does not become too dry or too wet.
5. Lastly, add in additional ingredients like raw unsalted nuts, coconut flakes, chia seeds, or my favorite dark chocolate chunks !
** Line a muffin pan with 12 nonstick cupcake holders / muffin holders (I buy the aluminum foil ones) **
Bake for approximately 11-13 minutes and test doneness with a knife !
